Longitudinal Study of Protein , Amino Acid and Fatty Acid Compositions in Human Breast Milk

Abstract
|
|
|
Human breast milk was evaluated in comparison with commercially available milk products by examining changes in various protein, amino acid and fatty acid compositions of milk with lactational age in 24 healthy mothers.
1) Total protein decreased significantly during the first 2 wks. and afterwards only slightly. On the other hand total fat contents increased with age and the carbohydrate remained constantly.
2) ¥ã-globulin fractions increased steadily with age after an initial decrease during the first wk. (9g/§¤).
3) The major part of free amino acids (AA) in human milk consisted of glutamine, glutamic acid, alanine and especially taurine, an important AA for brain development.
4) Total fatty acids (FA) increased with age. The increase in sat. FA was contributed mainly by short and medium chain FA and that in unsat. FA by polyunsat. FA(C18:2, C18:3). A negative correlation of the FA amount between synthesized FA(C12:0, C14:0) and blood FA (C16:0, C18:0, C18:1) was found.
5) These changes in compositions with lactat. age should be considered in preparing adapted milk products especially in the case of taurine and ¥ã-globulin.
